INGREDIENTS:
- 2 (1 1/2 pound) Certified Angus Beef ® flat iron steaks
- 2 1/2 teaspoons kosher salt
- 2 teaspoons ancho chili powder
- 2 teaspoons finely ground espresso
- 2 teaspoons brown sugar
- 1 teaspoon cocoa powder
- 1/2 teaspoon black pepper
INSTRUCTIONS:
- In a small mixing bowl whisk together salt, chili powder, espresso, brown sugar, cocoa powder and pepper.
- Generously coat flat iron steaks with the spice rub, cover with plastic wrap and refrigerate at least one hour.
- Grill steaks on medium high heat for 3-4 minutes per side (125-130°F internal temperature for medium rare). Rest 5 minutes, slice against the grain.
